In a cast iron skillet, preheat the coconut oil. Caramelize the onions and then add the garlic until aromatic, but do not brown them. Add the spinach until wilted (about 3-4 mins) and take it off the heat.

In a separate bowl, whisk the eggs. To this, you may also add cheese (feta & ricotta is nice) and spices (dill is good & cayenne gives it a nice kick)—up to you, really. Season with pepper (sprinkle a tiny pinch of salt only after cooking). To this whisked mixture, add in the spinach mixture until well incorporated then pour all of it into the skillet.

Put the skillet back on the stove and cook until the sides have browned. You may then continue cooking in an over (preheated 350° for 3-6 minutes) or until the center becomes golden brown.
